Hey guys! Ok, so, being sick all week last week, I missed out on a yearly family tradition that NEVER gets old at Christmastime. Making this delectable delight is always the highlight of my year, and I’m sad I missed out this year. Good thing about this recipe? It can easily be doubled, tripled,(can I go any higher?), which always means one great thing…. Extras you can sneak from dad’s desk drawer later!! (Shhhhh… Don’t tell! That’s a secret between us, ok?). Anyway, here’s Grandma’s special recipe!
Grandma Polly’s Chocolate Covered Peanut Clusters!
Ingredients:
- Good quality dark chocolate (We used dark chocolate imported from Italy, but you can use any type of chocolate you have on hand, as long as it’s considered good quality!)
- - unsalted, dry peanuts, (preferably raw, if you can)
- - Almonds
- - Cashews
Directions:

- Start the melting process of the chocolate. Melt 1 lb. of the chocolate in a double boiler, so the chocolate won’t burn.
- Add peanuts, almonds and cashews slowly in the chocolate mixture. Carefully stir and watch to make sure you don’t scorch anything.
- Watch to see if the peanuts start to stick together with the chocolate.
- Using a heat-proof spoon/ spatula, take small amounts of nut-and-chocolate mixture, and place (carefully) on baking sheet lined with wax paper.
- Let clusters cool and harden completely before you DEVOUR them!
